The heart of our dish is the Ampalaya itself. Ideally, go for young, green ones – they’ll be less bitter! When picking them out at the market, ensure they're firm, shiny, and without blemishes.

Next, slice them into thin half-moons. Now comes the twist: sprinkle salt on these slices and let it sit for 10 minutes. The salt will draw out the bitterness and you can then blitz it off with cold water.

Ready to drive your senses wild with amazing aroma? Then let’s fire up that stove and get cracking! Start by sautéing your finely chopped Garlic, Red Onion, and diced Tomatoes.
Keep sautéing till you get a beautiful medley of sweetness from onion and tomatoes, and a tantalizing aroma of garlic wafting in your kitchen. Remember, your base flavors are a big deal in this dish!

In goes our Ampalaya! Stir fry it with the garlic-onion-tomato mix. The key here is patience as Ampalaya tends to take its sweet time to soften up.
